Since Hurricane Sandy has decided to grace eastern Canada with her presence, and the baby in my belly has taken up kickboxing as a new hobby into the wee hours of the night, I had a terrible time sleeping and decided to stay home from work yesterday. So sue me! And given that I had little energy and it looked like this outside, I really wanted to make something easy and warm for dinner. Plus, I got to surprise hubby by being all domestic and having food ready when he got home. What a wonderful wifey I am!!
I’m really bad at following recipes. Usually I look at them and think, “Sure that’s a good idea, but I think it would be much better if I just improvised right here!” And so I did.
There was a box of Kraft Dinner in the pantry so I thought, hell I’ll just throw that sucker on! Then we had some ground beef just hanging out in the fridge so I figured that’s pretty good for protein. But then I decided just those things mixed together sounded boring, so I found some chilli powder. Perfect!
Took a little taste and still not the bang I was looking for. Damn. I poked around in the fridge for a bit and saw a lonely bottle of SALSA and BAM, slop some of that in and I feel all Gordon Ramsey! Melted some cheese over that bitch and I was done.
All the while, Cleo is watching me from her chair and I can hear her little, fuzzy tummy rumbling. I also catch her rolling her eyes at me and throwing in a sigh here and there. She does love me really, but scoffs at my lack of kitchen abilities.
Just in the nick of time, I finish supper and manage to scoop it onto our plates as hubby walks in the door, soaking wet from the downpour outside. Cleo was ever the skeptic and had to give it a good sniff first but she assured me that it was indeed, edible. Hubby seemed much more impressed with my efforts and finished his whole plate without even complaining. Which is surprising, because he could win the award for world’s pickiest eater if there were such a thing!
And my work here as a domestic goddess, is done!
