After working all day it can be difficult to work up the energy to create a healthy, filling meal for yourself and your family. You should have a comprehensive list of quick, easy and healthy meals! Make a go-to list of family favorites that don’t leave you feeling tired when you’re done cooking. Here are a few ideas to get you started!
If you want a quick and easy meal, you need to get a slow cooker if you don’t already have one! You probably already have most of the required ingredients in your kitchen, so this recipe is especially easy!
You’ll need two pounds of chicken breasts, garlic, onion, honey, soy sauce, rice wine vinegar, ginger, black pepper, and cornstarch. First, place the chicken breasts in your slow cooker in a single layer. Then whisk up the garlic, onion, soy sauce, honey, vinegar, ginger and pepper. When you’re done whisking, pour the sauce over the chicken. Place the lid back on the slow cooker and cook for five hours on high.
When it’s done cooking, remove the chicken and shred with a fork. Thicken the sauce by transferring it from the slow cooker to a saucepan. Combine three tablespoons of cold water and the cornstarch until it is smooth. Add the cornstarch mixture to the sauce and stir. Let it boil for a couple of minutes. Once it’s thickened, pour the sauce over the shredded chicken and combine. Serve your chicken teriyaki over rice for a delicious meal!
Lo mein and veggies
This is a healthier version of your favorite take-out food! You’ll need lo mein noodles, olive oil, garlic, cremini mushrooms, a julienned bell pepper, a julienned carrot, a handful of snow peas and three cups of baby spinach. The lo mein sauce ingredients are soy sauce, sugar, sesame oil, ginger and Sriracha.
Cook the noodles according to the package instructions. While the noodles are cooking, whisk together lo mein sauce ingredients. In a large skillet, heat up your olive oil and add the garlic, mushrooms, bell pepper and carrot. Cook them until the veggies are tender. Then, add in the snow peas and spinach and stir until the spinach wilts. Add the egg noodles and sauce to the skillet and stir to combine, then serve.
Garlic Chicken with Vegetables
This easy chicken recipe will slowly cook in your crock pot all day long! The ingredients include, eight chicken thighs, 16 ounces of halved red potatoes, baby carrots, and trimmed green beans. To make the garlic sauce, you’ll need soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper.
In a mixing bowl, stir together the soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes and pepper. Then, place the chicken, potatoes, carrots and sauce mixture into the crock pot. Cook on low for 8 hours. Thirty minutes before you serve the dinner, add the green beans.
This Mexican fajita pasta recipe is easy to whip up and delicious! You’ll need olive oil, one pound of chicken breasts, taco seasoning, diced onion, two bell peppers, garlic, chicken broth, half a cup of heavy cream, one can of Ro-Tel, penne pasta and salt.
Chop up the chicken into bite-sized pieces and season with half a packet of taco seasoning. Cook the chicken in a large skillet with olive oil. Remove the chicken and cook the onions, bell peppers and remaining taco seasoning in some more olive oil. Cook the veggies until they are slightly blackened, then turn the heat on low and add the garlic. Finally, remove the veggies and, in the same skillet, add the broth, Ro-Tel, pasta, cream and salt. Bring the mixture to a boil and cook until the pasta is tender. Add the chicken and veggies back into the skillet with the pasta and stir to combine.
Beef and Noodles
This recipe brings together the comfort of a home-cooked meal and the ease of an uncomplicated recipe! The ingredients include two pounds of boneless chuck roast, garlic, chopped onion, bay leaves, thyme, beef broth, egg noodles, salt, pepper and olive oil.
Cut the chuck roast into bite-size pieces and season generously with salt and pepper. Heat the olive oil in a saucepan, add the beef and sear it until brown. Remove the beef, then use the same oil to sauté the onion. Add the garlic, thyme and bay leaves to the onion. Add the beef back into the pan with the broth and simmer for three hours, stirring occasionally. When the beef is tender, add the noodles. Once the noodles are al dente, you can serve the dish!
Crock Pot Roast
This is the easiest roast you’ll ever make! You’ll need three pounds of chuck roast, potatoes, onion, beef broth, garlic powder, onion powder, Italian seasoning, salt and pepper.
Cut the potatoes and onion into large, two-inch chunks. Place the roast in the crockpot first, then add the vegetables, seasonings and broth. The roast should be covered in liquid, so feel free to add water if needed. Cook for 5 hours on high or 8 to 10 hours on low. Serve your family this delicious meal!
